Mardi Gras Celebration
In celebration of Mardi Gras, I decided to make a Low Country Boil. If you haven’t made it or ordered this dish at a restaurant, it’s a one-pot recipe consisting of potatoes, corn, sausage (like kielbasa) & shrimp, all flavored with “Old Bay” seasoning.
In the “low country”; coastal Georgia & South Carolina, outdoor cookers heated by gas are almost a required appliance! The cooker is as popular as an outdoor grill. A big pot will work, which is what I used & cooked on the stovetop.
The seasoned water gets heated to a boil & the first food you add is the potatoes & corn, which take the longest to cook. When these two are done, you add the sausage & lastly, the shrimp. The shrimp is always last because it only takes a few minutes. Once everything is cooked, drain, put it into a big bowl & dig in.
We had a great New Orleans feast (we didn’t use crawdads) & wonderful company with the “kids.”
